Introducing the Clean Green Comfort Soup - Rediscover Joy in Every Spoonful!





Hello, lovely souls! It feels like ages since I've shared a recipe here, but with the dawn of a new month, I couldn't resist coming back to unveil my much-anticipated Clean Green Comfort Soup recipe.


Vegan, gluten-free, and suitable for all dietary preferences, this soup is not just about nourishment; it's about embracing flavors that uplift your spirits and make you feel fantastic. Whether green juices aren't your thing or they don't quite hit the spot in colder weather, fear not! This simple one-pot wonder is here to satisfy your cravings for clean, green goodness and boost your health in the process.


For me, cooking is akin to practicing yoga. I put on some tunes, navigate around my Matt, exchange messages with friends, and express gratitude as I meticulously prepare each ingredient. The soup-making process is therapeutic, and I relish in enjoying it throughout the week, experimenting with different combinations to keep things exciting. Pair it with a side salad, a sandwich, or your favorite warm bread for a wholesome meal. Personally, I love topping it with sprouts and enjoying it alongside a slice of Canyon Ridge Gluten-Free bread.


Believe me when I say I could happily devour this soup for an entire week without getting bored. It leaves me feeling satisfied and energized, providing the nutrients I need to tackle my busy schedule, stay active, serve others, and maintain a positive outlook.

Because when you look good, you feel good!


This fall and winter, swap out your cold green juice or fresh salad for a comforting bowl of Clean Green Comfort Soup. Feel free to mix and match the veggies based on what's available, and most importantly, approach the cooking process with a sense of experimentation, gratitude, and joy!


Ingredients:

  • 1 tablespoon olive oil or coconut oil

  • 1 onion, chopped

  • 2-3 cloves of garlic, minced (add more for an extra immune boost or to keep the demons away)

  • 1 zucchini, chopped

  • 3-4 stalks of celery, chopped

  • 1 head of broccoli, chopped

  • 1 bunch of asparagus, chopped

  • 1-2 cups of leafy greens (spinach and dinosaur kale work wonders)

  • 32 oz vegetable broth

  • White pepper, to taste (start with a teaspoon)

  • Salt, to taste

  • LOVE (Cooking should always be done with a heart full of gratitude and positivity)

You'll also need a large pot and a blender or Vitamix.


Instructions:

  1. Heat oil in a pot and sauté onions until translucent.

  2. Add minced garlic and continue to sauté until fragrant.

  3. Incorporate chopped vegetables, adding a small amount of broth and white pepper intermittently. Start with the vegetables that require longer cooking times, saving the leafy greens for last.

  4. Once the vegetables are soft, add the remaining broth (or water if needed).

  5. Turn off the heat and ladle a portion of the soup into a blender or Vitamix. Blend until smooth, working in batches if necessary.

  6. Return the blended soup to low heat and season with salt to taste.

  7. Voila! Your soup is ready to serve and savor. And remember, just like the soup, you are absolutely gorgeous!
